What is dawet?
Dawet is a Javanese drink made from rice flour or glutinous rice flour. Along with the passage of times, this dawet can also be served with grated ice or crystal ice with brown sugar sauce and coconut milk. It is a typical drink of Banjarnegara, West Java. Today, this typical drinks has spread across Indonesia, including Bali.
The basic ingredients of dawet ice were formerly made from rice flour or glutinous rice flour, given green coloring in the form of suji leaves. The process of making it is simpler than cendol—similar serving. Dawet dough is molded using a simple sieve. After that, it is poured into a hollow sieve while shaking so that the dough falls. In this way, the dawet can have a pointed shape at the end.
Since it uses rice flour, dawet tends to have a softer texture than the chewy cendol ice. Dawet is usually served with grated ice, coconut milk, brown sugar, and fermented sticky rice. Some sellers even add ripe jackfruit so that it gives a special flavor. Each cup is sold for IDR 6,000.
